Heyyy!
Happy Monday. I mean I hope it’s a happy Monday for you?! I guess you can sit in 2 camps about a Monday.
You are see them as a fresh new start and feeling raring to go or you grumble and chunter your way through it and tap yourself on the back in the evening knowing you got through it.
Me? I’m a bit of both. If I’ve had a productive weekend, I usually see a Monday as a good thing. My food shop gets delivered on a Monday so that always helps and like a hamster in a wheel I want to plough my way through work to get me downhill to the weekend.
But anyway, you wanted to hear about my reset – not my Monday mindset?
I reintroduced potatoes. Mostly because I love potatoes. But I still feel really good so there’s that.
Day 4
Breakfast: Chocolate Wheat Biscs with 100ml Skimmed Milk
Lunch: Vegetable Minestrone Soup (it was a sort of thrown together soup, you know the kind?)
Tea: Seabass in a caper butter, Crushed potatoes, roasted & steamed carrots, courgette & broccoli
Day 5
Breakfast: let’s not even joke – you know it by now!
Lunch: Vegetable Minestrone Soup with 1 slice of bread & my HEXA cheese
Tea: Peanut Butter curry (recipe can be found here) made with prawns instead of chicken, broccoli, and crispy kale
Day 6
Breakfast: smoked salmon, poached eggs, and a hash brown
Lunch: Vegetable Minestrone Soup
Tea: Linda McCartney Sausages, Mash, broccoli, homegrown carrots & parsnips, and onion gravy
Day 7
Breakfast: Scrambled Egg with smoked salmon and a piece of toast
Lunch: fish and chips
Tea: pasta with blue cheese sauce, spinach & mushrooms
So, I know what you’re thinking. You did all that lovely home cooked food and then you went to a pub and ate fish and chips? But we had just walked just over 5 miles, most of which was scrambling over granite boulders and up and down hills along the South West Coastal Path. It was beautiful but one of the hardest walks we’ve ever done. For much of it we carried a pup each, so it was like cardio and weight training. That fish and chips was the greatest I’ve ever tasted.
But back to it for day 8!
